Healthier Chocolate Truffles

Rich, nutrient dense truffles with the perfect hint of sweetness.

Ingredients

Truffle

  • 1/3 cup Almond butter
  • 1 tbsp Honey
  • 1 tsp Vanilla extract
  • 2 tbsp Coconut flour
  • 2 tbsp Cocoa powder

Chocolate Shell

  • 1/3 cup Dark chocolate
  • 1/2 tsp coconut oil
  • Kosher salt

Instructions

Truffles

  • Add the almond butter, honey, and vanilla extract into a bowl and mix together.
  • Add in the coconut flour and cocoa powder and mix until thoroughly combined.
  • Once the mixture is combined, use your palms to roll into balls.
  • This mixture will form between 6 and 10, depending on how big you want to make them!
  • Put the truffles on a plate and place them in the freezer for about 10 minutes.

Chocolate Shell

  • While the truffles are hardening, melt the chocolate and coconut oil together in the microwave. I do 20 second increments, stirring in between.
  • Dip each truffle into the melted chocolate mix until covered completely, and then set it on a piece of parchment paper. Immediately sprinkle a few flakes of sea salt on top of each truffle before the chocolate has a chance to harden.
  • Once the truffles are all covered in chocolate and sprinkled with salt, let them sit in the refrigerator for another 5-10 minutes before digging in!
