Preheat oven to 350 F.
Using a mixer, mix the sugar, butter, greek yogurt, maple syrup, egg, almond milk, and vanilla extract until well-combined.
Add in the cashew flour, all-purpose flour, cinnamon, baking soda, baking powder, and salt.
Mix until thoroughly combined.
Grease an 8x8 pan.
In a separate bowl, mix together the cane sugar and cinnamon.
Scoop out 1/4 of the batter at a time, sprinkling the bottom with the cinnamon-sugar mixture, setting it in the pan, and then sprinkling the top with the cinnamon-sugar mixture. Do this until all of the batter is connected together in the pan, with cinnamon-sugar mixture on the bottom and the top of the batter.
Sprinkle the remaining cinnamon-sugar mixture on top of the batter and then bake for 22-23 minutes or until a toothpick comes out clean. Be careful not to over-bake!
Let cool for about 15 minutes and then slice and enjoy!
