Snickerdoodle Bars

Fluffy, moist and just the right about of sweet- it'll be impossible to just eat one!

Ingredients

Bars

  • 1/3 cup brown sugar sub coconut sugar or turbinado sugar
  • 2 tbsp melted butter
  • 3 tbsp greek yogurt
  • 1 tbsp monk fruit syrup sub maple syrup
  • 1 egg
  • 1 tbsp almond milk sub any milk
  • 1 tsp vanilla extract
  • 3/4 cup cashew flour sub almond flour
  • 3/4 cup all purpose flour
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp salt

Cinnamon-Sugar Topping

  • 2 tbsp cane sugar
  • 1/2 tsp cinnamon

Instructions

  • Preheat oven to 350 F.
  • Using a mixer, mix the sugar, butter, greek yogurt, maple syrup, egg, almond milk, and vanilla extract until well-combined.
  • Add in the cashew flour, all-purpose flour, cinnamon, baking soda, baking powder, and salt.
  • Mix until thoroughly combined.
  • Grease an 8x8 pan.
  • In a separate bowl, mix together the cane sugar and cinnamon.
  • Scoop out 1/4 of the batter at a time, sprinkling the bottom with the cinnamon-sugar mixture, setting it in the pan, and then sprinkling the top with the cinnamon-sugar mixture. Do this until all of the batter is connected together in the pan, with cinnamon-sugar mixture on the bottom and the top of the batter.
  • Sprinkle the remaining cinnamon-sugar mixture on top of the batter and then bake for 22-23 minutes or until a toothpick comes out clean. Be careful not to over-bake!
  • Let cool for about 15 minutes and then slice and enjoy!
